한·중 전통식 레스토랑에의 전통성 표현방법 비교

Abstract

한류문화에 힘입어 한식당이 전 세계적으로 급속히 전파하고 있으며 학문분야에서도 한국 식음공간에 대한 연구가 증가 추세이다. 그러나 아직 우리는 세계적으로 증가하고 있는 한식당이 과연 한국문화를 느낄 수 있는 공간으로 정착하고 있는지와 어떤 요소가 한국의 전통성을 느낄 수 있게 해 주는지는 확실히 밝혀지지 않았다. 어느 나라의 중식당에서도 중국문화를 강하게 느낄 수 있는 점은 중식당의 중요한 특징이다. 본 연구자는 레스토랑에서 전통문화와 분위기 형성의 주된 요소는 전통장식요소이므로 한·중의 전통식 레스토랑으로 그 대표성이 인정되는 곳을 선정하여, 양국 레스토랑에 표현된 전통성 표현방법의 공통점과 차이점을 규명하고자 하였다. 그 결과를 보면, 한국은 룸 공간과 통로의 벽면 조형과 소품부분에서는 전통 재해석의 전통성 표현방법을 많이 사용하였고, 벽과 천장, 창/문의 재료부분에서는 전통과 현대 융합의 전통성 표현방법을, 가구의 색채와 바닥부분에서는 전통 답습 방법을 많이 사용하였다. 중국은 통로의 벽면 조형과 천장, 창/문의 조형부분에서는 전통 재해석의 전통성 표현방법을 많이 사용하였고, 벽과 천장, 가구의 재료부분에서는 전통과 현대 융합의 전통성 표현방법을, 창/문의 조형과 재료, 가구의 문양과 색채부분에서는 전통 답습의 전통성 표현방법을 많이 사용하였다. 또한 문화적 특성에서 한국은 한식이 세계 주류음식으로 널리 전해지는 것에 대한 관심이 가장 컸고, 중국은 고유한 음식문화를 업그레이드 할 새로운 음식문화의 유파를 만드는 것에 대한 관심이 가장 컸다. 조형적 특성에서 한국은 일반적으로 간단하고 추상적인 조형을 선호하였는데 전통의 재해석을 보면 전통의 원형을 짐작할 수 없을 정도로 전통개념을 추상화하였다. 색채 사용 특성에서는 한국과 중국 모두 자연 나무에 유사한 갈색계열을 많이 사용하였으며, 일반적으로 산뜻한 색을 선호하지 않았다. 한편, 중국 레스토랑은 한국보다 색채가 다양하여 일반적으로 빨간색과 금색을 선호하였다. 재료 사용 특성에서는 한국과 중국 모두 목재와 석재를 많이 사용하였다. In this study, we selected 12 typical traditional restaurants in Korea and China and analyzed their application of traditional design approach. Through this analysis, we tried to explore similarities and differences of Korean restaurants and Chinese restaurants in order to determine the preferable way to express their own traditional design. We categorized traditional design approach as cultural elements, designing method, coloring and materials. The results are as follows: First, following a tradition and interpreting a tradition are considered as compelling design methods to express traditional culture. However, when combining a traditional and a modern design approach, it is important to either strongly emphasize traditional design elements or use small number of traditional design elements as focal points in modern design restaurants. Second, when designing a traditional restaurant using modern design elements with traditional focal points, it is more desirable to follow and/or to interpret a traditional elements, rather than experimenting an excessively unconventional design. Moreover, the design elements of exterior of a restaurant shows the identity of the restaurant. Therefore, using traditional elements in the exterior helps recognizing the traditional characteristics and culture. On the other hands, for the interior of the restaurant, it is better to use modern design method and materials for the practical reasons, such as construction cost reduction and ease of construction. We also discovered that it is more effective to use traditional elements to the pattern and color. The results of this study will set a foundation for further research of developing a design guideline for traditional restaurants.
