- Abstract
- This study aims to fabricate thermoresposive microcapsules containing cacao pigment and investigate the feasibility of mimicking the browning system of real meat by applying it to plant-based analog meat (PBMA) model. The color change was accompanied by enzymatic decolorization of red beet pigment. Firstly, cacao pigment-loaded water-in-oleogel emulsions (CP/OEs) were prepared with varied concentrations of candelilla wax (CW, 2.5, 5.0, 7.5, and 10.0%) and evaluated for morphology, particle size, thermal rheology, pigment release, and storage stability. As a result, the CP/OEs exhibited a decrease in particle size and an increase in a gel-sol transition temperature as the CW concentration increased. In addition, the CP/OEs showed a temperature-dependent pigment release pattern, from less than 13% at 60°C for 1 min to more than 67% at 80°C, and a burst release pattern, approximately more than 77% at 70℃ for 8 min. The highest pigment release rate, approximately 91%, was shown at CP/OE with CW (2.5%), which was completely stable during storage at -18℃ for 28 days. Subsequently, red beet pigment (RBP) and laccase (LC) were applied to soy protein isolate patty containing CP/OE with CW (2.5%) (CP/OE-SP), and the color values (L*, a*, b*, and ΔE) before and after cooking were compared with those of beef patty. During oven cooking, the release of masked pigment was confirmed in CP/OE-SP. And the combination of RBP (0.10%) and LC (0.15%) in the presence of CP/OE was most suitable to imitate the color of the beef patty. These findings demonstrated the applicability of a thermoresponsive encapsulation method as a novel approach for enhancing the color property of PBMA during cooking. |식물성 대체육은 식물 유래 단백질을 이용하여 육류를 모방한 형태의 제품으로 지속 가능성, 경제성 등의 다양한 이점으로 인해 최근 그 수요가 증가하고 있다. 조리 중 미오글로빈 변성으로 인한 육류의 색 변화를 모방하기 위해 콩 단백질을 기반으로 제조되는 식물성 대체육은 추가적인 색소 첨가나 기술이 필요하나 이와 관련된 연구는 아직 부족한 상황이다. 따라서, 본 연구에서는 온도감응형 색소 방출을 목적으로 올레오겔 에멀젼을 제조하여 식물성 대체육에서 유사 육색을 구현하고자 한다. 이를 위해 candelilla wax (CW)의 농도(2.5, 5.0, 7.5, 10.0%, w/w)를 달리하여 카카오색소 포집 W/Og emulsion (CP/OEs)를 제조하였다. 모든 입자는 구형의 형태를 띄며 33.51–21.92 um의 입자 크기를 가졌다. 온도에 따른 점탄성 측정 결과, 입자의 겔-졸 전이 온도는 CW 농도가 증가할수록 증가하였고 44.67–68.00℃의 값을 가졌다. 가열 온도 및 CW 농도에 따른 CP/OEs의 색소 방출 프로파일을 비교 분석한 결과, 모든 CP/OEs는 60, 70, 80℃에서 1분간 가열 시 온도가 증가할수록 색소 방출율이 증가하였고 70℃에서 CW의 농도에 따른 색소 방출율의 뚜렷한 유의적인 차이를 보였다. 또한, 70℃에서 8분간 가열 시77% 이상의 색소 방출율을 나타내어 버스트 방출 특성을 가지는 것을 확인하였다. 그 중, 가장 높은 색소 방출율을 보이는 CW 2.5% 로 제조된 CP/OE (CW2.5)의 저장안정성(25, 4, -18℃, 28일)을 측정하고 해당 조건의 에멀젼이 첨가된 soy protein isolate patty (CP/OE-SP)를 제조하여 조리 전후 색도를 평가하였다. 그 결과, -18℃에서 28일간 입자의 상 분리 및 색 변화가 나타나지 않아 가장 안정하였고, 오븐 조리(170℃, 7분)에 의해 마스킹 되어 있던 카카오색소가 방출이 되는 것을 확인하였다. 또한, 레드 비트 색소(RBP)와 락케이즈 (LC)를 CP/OE-SP에 농도별로 첨가하여 조리 전후 색을 beef patty와 비교했을 때, RBP 0.10%와 LC 0.15%가 첨가된 패티가 조리 전후 모두에서 가장 작은 ΔE값을 나타내어 beef patty와 가장 유사한 색을 가지는 것을 확인하였다. 결론적으로, 본 연구 결과는 CP/OE가 조리 중 식물성 대체육에서 색소를 방출하여 식물성 대체육의 색 특성을 개선하기 위한 새로운 방법으로 적용될 수 있음을 시사한다.
