식품기업의 공급망 품질경영 실행이 기업성과에 미치는 영향

Abstract

식품산업은 국민에게 기본식량을 공급하는 산업으로 2015년 기준 세계 식품시장 규모는 IT와 자동차 시장을 합한 것보다 크며, 지속적인 식품산업의 발전을 위해서는 식품안전사고 방지를 최우선 목표로 하여야 한다. 식품안전사고는 소비자로 하여금 식품에 대한 불신을 유발하여 소비자의 식품 구매 시 바로 영향을 미칠뿐더러 식품사고가 발생한 후에도 오랜 기간 동안 해당 기업에 대하여 부정적인 인식이 이어지게 될 수 있다. 식품산업의 공급사슬은 최초 공급자로부터 최종 고객에 이르기까지 수입과 수출을 포함하여 공급사와 구매사, 유통사에 이르기까지 다단계 공급사슬에 크게 의존하고 있다. 식품산업 관련 선행연구를 살펴본 결과 공급사슬 전반에 걸친 기업간 파트너쉽, 콜드체인, 추적이력관리시스템, HACCP 등의 인증제도와 물류성과를 비롯한 식품안전, SCM성과와의 관계 등에 대한 연구 위주로 진행된 것을 확인할 수 있다. 공급사슬이 복잡하며 식품의 안전을 중요시하는 식품산업에 국내에는 아직 연구가 상대적으로 적은 공급망 품질경영에 대한 실증연구가 필요하며, 특히 기존에는 대부분 공급사슬의 주체를 모기업과 공급업체로 보았으나, 공급사슬의 주체로 소비자를 포함시킬 필요가 있다. 또한 최근 소비자는 기업의 상품을 구매할 때 품질은 물론이고, 기업의 사회적책임 활동에 대한 관심도 증대되고 있으므로 식품위험을 방지하기 위해 식품의 공급사슬관리 전반에 기업의 사회적책임이 수반될 필요가 있다. 본 연구는 국내 중견기업 이상 규모의 식품기업을 대상으로 공급망 품질경영 실행이 식품안전성과를 통하여 기업성과에 영향을 미치는지에 관한 연구로써 공급망 품질경영 선행연구를 바탕으로 국내 식품기업에 적용하고, 식품기업의 CSR 실행 수준이 공급망 품질경영에 따른 식품안전성과와의 관계에서 조절효과가 있는지의 여부를 확인하여, 지속가능경영을 위한 식품기업의 공급망 품질경영 실행 및 CSR 실행의 중요성을 제시하고자 하였다. 이에 따라 본 연구에서는 국내 식품제조기업들을 표본으로 하여 공급망 품질경영 실행요인에 대한 개념 타당성분석과 신뢰성분석을 통하여 연구가설을 검정한 결과 식품기업의 공급망 품질경영 실행이 식품안전성과와 기업성과에 유의하게 영향을 미쳤으며, 식품기업의 공급망 품질경영 실행의 일부 요인이 CSR 실행에 따라 식품안전성과에 조절효과를 미치고 있음을 확인하였다. 특히 식품산업에서 식품안전성과는 품질성과 중 특히 주요한 성과지표임을 확인하였으며, 식품안전성과가 수반되어야만 기업성과를 달성할 수 있다는 매개효과를 확인하였다. 이와 같이 식품산업의 주요 공급망 품질경영 및 CSR 실행요인을 도출하여 식품안전성과 및 기업성과와의 영향관계를 검증함으로써 선행연구의 이론을 보완하는 학문적 시사점을 제시하고자 하였다. 또한 소비자를 대상으로 기업이 생각하는 식품안전성과와 CSR 실행의 인식 차이를 별도로 조사 및 분석하여 기업의 공급망 품질경영 및 CSR 실행에 참고가 될 수 있도록 하였다.|The food industry is an industry that supplies basic food to the people, and as of 2015, the size of the global food market is larger than that of the combined IT and automobile markets, and for the continuous development of the food industry, food safety accidents should be the top priority. Food safety accidents not only cause consumers distrust in food, which immediately affects consumers' food purchases, but can also lead to negative perceptions of the company for a long time even after the food accident occurs. The food industry's supply chain relies heavily on multi-level supply chains, from first suppliers to end customers, including imports and exports, suppliers, buyers, and distributors. As a result of examining previous studies related to the food industry, it can be seen that the certification system such as inter-company partnership, cold chain, tracking history management system, and HACCP throughout the supply chain, as well as food safety and SCM performance. In the food industry, which has a complicated supply chain and places importance on food safety, empirical research on supply chain quality management is still needed in Korea, and in particular, most of the supply chain subjects were viewed as parent companies and suppliers, but consumers need to be included. In addition, when purchasing corporate products, consumers are increasingly interested in corporate social responsibility activities as well as quality, so corporate social responsibility needs to be accompanied by overall food supply chain management to prevent food risks. This study aims to present the importance of food companies' supply chain quality management and CSR execution for sustainable management by applying it to domestic food companies based on previous studies on supply chain quality management. Accordingly, this study examined the research hypothesis through conceptual validity analysis and reliability analysis of supply chain quality management implementation factors based on domestic food manufacturers, and confirmed that food chain quality management implementation had a significant effect on food safety. In particular, it was confirmed that food safety performance is a particularly major performance indicator among quality performance in the food industry, and that corporate performance can be achieved only when food safety performance is accompanied. In this way, by deriving major supply chain quality management and CSR implementation factors in the food industry and verifying the impact relationship between food safety performance and corporate performance, it was intended to present academic implications to supplement the theory of previous studies. In addition, by separately investigating and analyzing the difference in perception between food safety performance and CSR execution for consumers, it was possible to refer to the quality management of the company's supply chain and CSR execution.
