Abstract
커피 소비의 대중화로 인해 현재 우리나라는 카페 과포화 상태에 이르고 있으며, 커피사업의 시장경쟁 심화를 유발하고 있다. 따라서 차별화된 경쟁력 강화 방안이 없는 한 커피 전문시장에서 도태되고 말 것이다. 수많은 카페가 범람하는 이 시점에서 ‘업사이클링’ 된 카페가 관심을 끌고 있다. 이는 가치추구 소비자들의 등장으로 인해 초래된 결과이다. 가치추구 소비자들은 자신의 감성과 라이프 스타일에 맞는 카페를 소셜 네트워크를 통해 찾아다니고 있으며, 카페는 단순히 기능적으로 커피를 마시는 공간이 아닌, 소비자들이 필요로한 휴식, 취미, 만남, 일 등 모든 것을 통용적으로 할 수 있는 공간으로 자리잡고 있다. 또 일상과는 다른 차별화된 비일상적인 체험의 감성을 추구하고 있다. 따라서 감성디자인이 중요한 화두가 되고 있으며, 소비자들의 취향이 다변화됨에 따라 소비자가 원하는 감성의 디자인을 파악하여 적용함으로써 색다른 체험을 할 수 있는 공간으로 계획하여야 한다. 따라서 현재, 소비자들이 선호하고 있는 ‘업사이클링’ 된 카페의 어떠한 실내구성요소를 통해 어떠한 감성을 느껴 어떠한 만족감을 얻는지 파악할 필요가 있다. 본 연구는 현재 소비자들이 선호하고 있는 ‘업사이클링’ 된 카페의 통상적 개념을 정의하고 ‘업사이클링’ 된 카페의 어떠한 실내구성요소가 어떠한 감성을 느끼게 하는 지 파악하기 위해 루돌프 슈타이너의 12감각론을 분석도구로 활용하고자 한다. 루돌프 슈타이너의 12감각은 인간의 오감, 즉 시각, 청각, 후각, 미각, 촉각만이 있는 것이 아니라 온도, 균형, 운동, 생명, 자아, 사고, 언어감각을 포함하여 총 12가지 감각이 상호작용을 이루어 공감각이 작용됨으로써 지각의 과정을 거쳐 형성된 경험을 말한다. 이러한 감각의 작용이 감성을 도출해 내는데, ‘업사이클링’ 된 카페를 통해 어떠한 감각이 자극하여 어떠한 감성을 느끼는지 파악하기위해 전문가 인터뷰를 통해 분석하였다. 또한 ‘업사이클링’ 된 카페의 실내구성요소를 선행연구를 통해 구조적 요소인 파사드, 바닥, 벽, 천장, 개구부, 가구 요소인 테이블 및 의자, 카운터 및 조리대, 장식적 요소인 조명을 도출해내어 이러한 실내구성요소에 따른 감각의 작용을 분석하고자 하였다. 최종적으로 전문가의 인터뷰와 선행연구를 바탕으로 상반된 감성어휘를 도출하여 실질적으로 이용하고 있는 소비자를 대상으로 설문지를 통해 객관적이고 타당성 있는 연구를 진행하였다. 상반된 감성어휘는 따뜻하다-차갑다, 좋아하다-싫어하다, 쾌적하다-쾌적하지 않다, 부드럽다-딱딱하다, 현대적이다-전통적이다, 친밀하다-낯설다, 자유롭다-제한적이다, 조화롭다-조화롭지 않다로 총 8가지 어휘이며 의미분별척도법 7점 리커드 척도 평가방법을 활용하여 ‘업사이클링’ 된 카페에서 느끼는 감성을 도출해내었다. 결과적으로 본 연구를 통해 소비자들이 보다 선호하는 감성의 카페 공간의 디자인 플랫폼을 계획하는데 기초자료로 활용할 수 있는 점에 의의를 둘 수 있을 것이다. |Due to the popularization of coffee consumption, Korea is now in a state of oversaturation of cafes, and it is causing the competition of the coffee business to intensify. Therefore, unless there is a way to strengthen the competitiveness of the coffee market, it will be culled in the coffee market. At this time, many cafes are flooded, the ‘up-cycling’ cafe is attracting attention. This is the result of the emergence of value-seeking consumers. The value-seeking consumers are looking for cafes that fit their emotions and lifestyles through social networks, and cafes are not simply functional coffee-drinking spaces, but are becoming a space where consumers can do everything in common, such as rest, hobbies, encounters, and work. In addition, it pursues the sensibility of non-daily experience different from everyday life. Therefore, emotional design is an important topic, and as consumers' tastes are diversified, they should be planned as a space where consumers can experience different experiences by grasping and applying the design of emotions they want. Therefore, it is necessary to understand what kind of emotions are felt and satisfaction is obtained through the indoor components of the 'upcycling' cafe that consumers prefer. This study defines the common concept of 'upcycling' cafes that consumers prefer now and uses Rudolph Steiner's 12-sensory theory as an analysis tool to understand what kind of interior elements of 'upcycling' cafes feel. Rudolf Steiner's 12 senses are not only human five senses, that is, visual, auditory, olfactory, palate, and tactile, but also experiences formed through the process of perception by interacting with a total of 12 senses including temperature, balance, exercise, life, self, thought, and language sense. This sensory action derives emotion, and it was analyzed through expert interviews to understand what sensations stimulate and feel through 'upcycling' cafes. In addition, through previous studies, the interior elements of the 'upcycling' cafe were derived from the structural elements such as facade, floor, wall, ceiling, opening, table and chair, counter and counter, and lighting, which are furniture elements, and the effects of the senses according to these interior elements were analyzed. Finally, based on interviews and previous studies of experts, the researcher drew conflicting emotional vocabulary and conducted objective and valid research through questionnaires targeting consumers who are actually using them. Contrary emotional vocabulary is warm – cold, like – dislike, pleasant - not pleasant, soft - taut, modern – traditional, intimate - unfamiliar, free, limited, harmonious - not harmonious. There are 8 vocabulary in total, and it is 'upcycling' using 7 point Liker scale evaluation method I derived the emotions I felt in them. As a result, this study will be meaningful in that it can be used as basic data to plan design platform of cafe space with more emotional preferences by consumers.
